1 1/2 cups long grain white rice
1 tbsp vegetable oil
1 small onion, finely chopped
1 clove garlic, finely chopped
2 1/2 cups boiling water
1 tsp salt
1. Rinse the rise in a sieve under cold water until the water runs clear. Drain well.
2. Heat the oil in a large pan and fry the onion and garlic for 2-3 minutes until the begin to soften. Add the rice and salt, and stir for 2-3 minutes to coat the grains in the mixture. Pour in the boiling water; it should cover the rice entirely, with 1/2in to spare.
3. Bring the water to the boil, then lower the heat and covermthe pan. Cook for 15-20 minutes,or until the grains are tender and all the wAter has been absorbed.
4. Remove from the heat and leave to stand, covered with the lid, for a minute or two. Stir through with a fork to separate the grains, and serve straight away.
