4 tbsps vegetables oil

2 cloves garlic,minced

1 medium onion,chopped

2 medium tomatoes,chopped

1 pound lean ground beef

1 1/2 tsp salt

1/2 tsp black pepper

1/4 tsp sugar

1 tsp parsley or cilantro,minced

1 medium potatoes,peeled and diced

5 eggs,well beaten

In a skillet,heat 1 tbsp of the oil and saute the garlic,onions and tomatoes.

Add the ground beef and stir until it is browned,about 5-7 minutes.

Add the salt,pepper,sugar,parsley or cilantro,potatoes .Cover and cook for 15 minutes or until the potatoes are tender or all the liquid has evaporated.Remove from the heat and allow to cool slightly.

Stir the beaten eggs into the meat and vegetables.

In a nonstick skillet,heat 2 tbsps of the oil and coat the bottom of the skillet evenly. Pour the egg and meat mixture into the skillet and let cook undisturbed for 2-3 minutes over medium heat.Loosen the sides with spatula,place a plate over the omelet and skillet,and turn the skillet upside down so that the torta lands on the plate cooked side up

Add the remaining 1 tbsp of oil to the skillet and slide the omelet back into the skillet with the uncooked side down. Cook for 2 minutes more over medium heat. Transfer the omelet to a serving plate.-4-6 servings
