Rice a natural to serve with a stir fries. If you pla to serve it with this one, start cooking it before you do anything else.
Makes 4 servings (5 cups)
WHISK:
1/4 cup dry sherry
1/4 cup low-sdium beef broth
2 tbsp low- sodium soy sauce
1 tbsp rice vinegar
1 tbsp sugar
1 tbsp cornstarch
1/4 tsp toasted sesame oil
10 oz. beef tenderloin,thinly sliced
HEAT:
3 tbsp peanut oil divided
1/4 cup minced fresh ginger
3 tbsp minced fresh garlic
1 tbsp red pepper flakes
2 cups stemmed shiitake mushrooms,torn if large
2 tbsp sesame seeds,toasted
Whisk together sherry,broth,soy sauce,vinegar,sugar,cornstarch, and sesame oil. Add tenderloin to the marinade.
Heat 2 tbsp oil in a saute pan over high heat. Add tenderloin(reserve marinade) and stir fry briefly, 1 minute per side; transfer to a plate. Add ginger, garlic, and pepper flakes to pan and stir fry 10-15 seconds.
Add remaining 1 tbsp peanut oil to pan. Stir in mushrooms and onions, stir frying 3-4 minutes. Add reserved marinade and the beef to the pan. Stir vigorously to heat meat and thicken sauce, no more than 2 minutes. Garnish stir fry with sesame seeds.
