1 lb 2 oz spinach

3 tbsp olive oil

2 hot dried hot chillies

1 oz shallot, cut into fine slivers

1/2 tsp salt

1/2 tsp sugar

1/2 tsp garam masala

4 tbsp single cream

1. Wash the spinach and remove any large stalks. Cut the spinach leaves into wide ribbons if they are large, or leave them whole if they are small.

2. Put the oil in a wok or pan and set to high heat. When hot, put in the chillies and stir quickly once or twice until they darken. Immediately add the slivers of shallot. Stir and fry over a medium-high heat until they brown.

3. add spinach,salt,sugar,and garam masala. Stir well and cook until the spinach has wilted completely.

4. Add the cream and cook, stirring 4-5 minutes.
