RAW ZUCCHINI RIBBON SALAD

RAW ZUCCHINI RIBBON SALAD
with arugula + walnuts + lemon + basil
Vegetarian, gluten – free

Zucchini subs for pasta in this fresh dish. It’s easy to cut into ribbons using a vegetable peeler.

DRESSING:

Juice of 1 lemon
1/2 tbsp olive oil
1/2 tsp salt
1/2 tsp sherry vinegar

2 zucchini
1 cup arugula
1/4 cup basil , chopped
1/3 cup walnuts

To make dressing, whisk together lemon juice, olive oil,salt and vinegar in a small bowl. Cut zucchini into ribbons using a vegetable peeler. In a large bowl,add zucchini , arugula, basil and walnuts. Add dressing and toss to combine.
