PRAWNS IN A BUTTER TOMATO SAUCE

A very elegant dish,ideal for entertaining. Serve itnwith plain rice. The sauce can be made ahead of time and refrigerated, but the stir-frying is best done just before serving.

For the sauce:
1 tbsp tomato purée
3/4tsp salt
1/4tsp sugar
1tsp gar am masala
1/2tsp ground cumin
1/2tsp cayenne pepper
1tbsp lemon juice
7 fl oz single cream
4tbsp water

2 tbsp olive oil
1oz unsalted butter
1 tsp cumin seeds
2 tbsp finely chopped shallots
3 garlic cloves,finely chopped
11/4 lb medium sized raw prawns,peeled,deveined then rinsed and patted dry
1/4 tsp ground turmeric
1 tsp ground coriander
1/4 tsp cayenne pepper
1/2 tsp salt

1. Combine all the ingredients for the sauce in a bowl and whisk until smooth. Cover and chill until needed.

2. Put the oil and butter. In a large frying pan and set over a high heat. When hot,add the cumin seeds and let them sizzle for 10seconds. Put in the shallots and garlic and cook, stirring,until very lightly browner. Add the prawns, turmeric,coriander,cayenne and salt. Stir and fry u till the prawns have just turned opaque.

3. Pour in the sauce and heat it through, stirring as you go. Serve immediately.
