PISTACHIO- CRUSTED SALMON
with garlicky smashed potatoes

Gluten-free

Salmon is a tasty superfood, loaded with omega- 3- fatty acids that help fight inflammation, make you skin glow, improve cardiovascular health and make you feel great. Serve with garlicky smashed potatoes and sautéed spinach to round out your meal.

Garlicky Smashed Potatoes
1/2 tsp salt
2 large red potatoes
2 tbsp olive oil, divided
2 cloves garlic, minced
1 tbsp basil , chopped
3 tbsp parmesan cheese
2 (6-oz)pieces salmon
2 tbsp Artichoke Pistachio Pesto
1/4 cup pistachios, chopped
1 lemon

Preheat oven to 425*.To make the potatoes,bring 2 qt if water to a boil in a large saucepan. Add salt and potatoes. Let cook 20 minutes. When potatoes are tender, drain water and let cool. Cut into quarters and place in an aluminum foil- lined baking sheet. Smash potatoes and drizzle with 1 tbsp olive oil. Roast in the oven 15 minutes. When finished cooking, use a spatula to place in bowl and toss with garlic, basil, 1 tbsp oil and parmesan. Meanwhile,spoon 1 tbsp of pesto on each piece of salmon , spreading evenly to coat. Sprinkle pistachios over each piece of salmon. Bake until cooked through, 12 to 15 minutes. Serve with a squeeze of fresh lemon.
