OVEN ROASTED SALMON

START TO FINISH: 20 MIN. MAKES: 4 SERVINGS

1 center- cut salmon fillet ( 1 1/2 lbs.)

1 tbsp olive oil

1/2 tsp salt

1/4 tsp pepper

  1. Place a large oven-safe skillet in a cold oven. Preheat oven to 450*. Meanwhile, brush salmon with oil and sprinkle with salt and pepper.
  2. Carefully remove skillet from oven. Place fish, skin side down, in skillet. Return to oven; bake uncovered, 14-18 minutes or until salmon flakes easily and a thermometer reads 125*. Cut salmon into four equal portions.

3 Ways to Season Salmon

Top salmon fillets with one of these quick and easy mixture before baking. Try the toppers on other white fish, chicken or pork, too. Each yields 1/4 cup, enough for one 1  1/2 lb. fillet.

DILL & CAPER BUTTER

In a small bowl, mix 1/4 cup softened butter, 1 tbsp minced shallot, 1 tbsp minced fresh dill, 1 tsp dijon mustard and 1 tsp chopped capers.

 

MAPLE SOY GLAZE

In a small bowl, mix 1/4 cup maple syrup, 2 tbsp soy sauce, 1 minced green onion, 1/2 tsp grated fresh ginger and 1/4 tsp red pepper flakes.

 

GREMOLATA

In a small bowl, mix 1/4 cup minced fresh parsley, 2 tbsp olive oil, 1 tbsp lemon juice, 1 minced garlic clove, 1 tsp grated lemon peel, 1/2 tsp salt and 1/4 tsp pepper.
