3 tbsp crunchy peanut butter

2 tbsp lemon juice

2 tbsp soy or tamari sauce

1 tbsp brown sugar

1 tsp chopped fresh ginger

1 clove garlic, finely chopped

crushed chili pepper to taste

2 tbsp water

1 lb mahi mahi fillets, cut into strips

1. in a bowl, whisk together all the marinadeingredients until smooth.

2.Add the mahi mahi strips. Coat well, cover and place in the refrigerator to marinate for 20 to 25 minutes.

3. in the meantime, soak bamboo or wood skewers in water.

4. Preheat the grill to medium hot.

5. Removethe mahi mahi strips from the marinadeand thread ontothe skewers  to make satays.

6. Cook for 5 to 7minutes, turning once. Serve immediately, accompanied with your favorite garnish.
