12 oz cooked boneless roast lamb or beef

3 tbsp olive oil or groundnut oil

1/4 tsp cumin seeds

1/4 tsp brown mustard seeds

8 fenugreek seeds

4 oz green pepper,cut lengthways into slivers 1/8 inch thick

1-2 hot green chillies

5 oz onion, ut into thin half rings

1 tsp worcestershire sauce

1 tsp ground cumin\

1 tsp ground coriander

1 tsp turmeric

1 tsp salt

freshly ground pepper

1. Cut cooked meat into slivers, about 1/4 inch thick, 1/4 inch wide and 3 in long.

2. Put the oil in a large frying pan and set it over a medium high heat. When it is very hot, put in the cumin,mustard and fenugreek seeds.

3.As soon as the mustard seeds begin to pop- a matter of seconds- put in the green pepper,chillies and onion. Fry, stirring,until the onion has browned and the mass of vegetables has reduced

4. Add the meat, Worcestershire sauce, cumin,coriander,turmeric,salt and pepper. Cook stirring over a medium- high heat for 3-4 minutes , until the meat has heated through

Taste for balance of seasonings, adding of more whatever you need.
