10  saba bananas or 4 plantain,ripe but not too soft,peeled

1 1/2 cups grated fresh coconut

3/4 cup dark brown sugar

1/2 cup cassava flour

banana leaves



In a large bowl,using a potato masher or a fork, mash the bananas two at a time,mixing in, a few tbsp at a time the grated coconut and brown sugar.

When all the bananas are mashed and the coconut and brown sugar is incorporated, add the cassava flour.Mix well with a wooden spoon.

Soften the banana leaves.Place 2-3 heaping tbsp of the bananas onto banana leaves.Wrap tightly.



In a large pot,arrange the bundles of suman, and cover them with boiling water. Cook for 35-45 minutes or until done.



Unwrap the suman . Sprinkle with a little fresh grated coconut.

Makes about 12-15  suman
