3/4 cup rice vinegar
1/2 cup coconut milk
2 tbsp oil
1/4 cup soy sauce
10 garlic cloves ,peeled
3 whole bird’s eye chillies or other fiery chili
3 bay leaves
1 1/2 tsp freshly ground pepper
3 to 4 cut up back spareribs
Sear first the spareribs in 1 tbsp oil.Drain and Discard the liquid.
Add the rest of the ingredients except coconut milk and continue cooking in medium heat until meat is tender,about 45 minutes.
At the end of cooking the spareribs adobo should be thick and rich.
Serve with white rice..
