SHRIMP CEVICHE

2 lbs of medium shrimp,cooked in beer and thick coconut milk
2 red onions,sliced very thinly
5 tomatoes,sliced  thinly or chopped,seeds out
Juice of 10 limes,about 1 cup
Juice of 2 orange
bunch of cilantro,chopped very finely

Salt and pepper and oil to taste

First u take the outer shell of the shrimp,using a small paring knife,cut along the outer edge of the shrimp’s back. Remove and discard the veins.

Cooked the shrimp in coconut milk and beer..make sure not to over cook the shrimp

Marinate the onion before adding to the shrimp with a lot of sea salt until tender or about 20 minutes..this way ,bitterness of onion is released.Wash the salted onion and discard water.,add about 1 tbsp of lime juice to the onion and marinate for about 15 minutes.Now Mix the onion with the tomato and cilantro(I forgot to take picture of cilantro).

Then add to the shrimp and the rest of the ingredients.Let it marinate for at least 3 hours in the fridge.Adjust the salt and pepper if needed..
