12 egg whites

1/2 tsp cream f tartar

1 cup superfine sugar

1/2 cup chopped cashews

1 tsp vanilla extract


8oz semisweet chocolate,chopped

6egg yolks

2 sticks butter,softened

1/2 sugar

1/4 cup chopped cashews



1.Preheat oven to 225F. Line 3 baking sheets with parchment paper(dont use cheap parchment paper).Draw squares on parchment paper.
2. In a large bowl,beat egg whites and cream of tartar with electri mixer at high speed until soft peaks form. Gradually beat in sugar;beat until meringue is stiff and glossy. Fold in vanilla and cashews.
3.Divide meringue between the 3 pans,and spread evenly.
4.Bake in preheated oven 2 hours or until merigues are completely dry. Cool on baking sheets 5 minutes. Carefully peel off lining paper;cool completely on wire racks.
5. To make filling, melt chocolate in a small heavy saucepan over very low heat;until smooth. Beat in egg yolks, 1 at a time,beating well after each additon.Refrigerate about 1 hour until completely cool and set.
6. In a bowl,beat butter  and sugar together until light nd fluffy.Add in chilled chocolate mixture.Spread evenly on meringue and  sprinkle  cashews on top.Refrigerate until served
