This is a interesting and tasty dish using curry as a flavoring. It is a very filling entree.
4 pieces salmon filets
1 medium size onion-thinly sliced
1 green bell pepper-sliced
1 tbsp butter
1/4 cup white wine
1/2 chicken broth
2 tsp curry powder
1/2 cup fresh cream
salt to taste
pepper to taste
Cut the salmon filets in half. Sprinkle with salt and pepper.
In a frying pan, melt 1 tbsp of butter and saute onion slices. Remove and add salmon filets .
Put back the onion,bell pepper, and pour in white wine and chicken broth.Sprinkle curry powder on top. Bring the liquid to a boil, then set the heat to low and cover with lid.Cook for 10 minutes.
Add fresh cream and just bring to a boil. Remove from the heat, season with salt and pepper and serve.
