SALMON BURGER

 

2 lb salmon fillets,skinned and finely chopped

salt and freshly ground black  pepper

1 large egg

1/2 cup breadcrumbs

1/4 cup chopped scallions

1 medium onion,finely chopped

1/2 tsp garlic powder

1 tsp lemon juice

Flour for dusting

Vegetable oil for frying

Gently mix all ingredients

 

Take a handful of the mixture at a time,roll in balls,then flatten into cakes. Dust each with flour

 

Heat a little oil in a frying pan over medium heat. Fry the fishcakes for 4-5 minutes each side.
Serve with lemon mayo or tartar sauce.
