1 lb pork belly
3 cloves garlic,crushed
2 bay leaf
1/3 cup cider or white vinegar
2 tbsp soy sauce
1 medium onion sliced
1 cinnamon stick
1 tbsp brown sugar
whole black pepper
Combine all the ingredients in a heavy pot
Place pot over medium heat and bring to a boil
Lower the heat and simmer covered until meat is tender or you see the sauce is almost dry up. Adjust seasoning .
Scrape up the bits on the bottom of pan..Serve with white rice
