3 lbs chicken,cut into pieces
5 cups water
3 slices ginger,crushed
1/2 tsp whole peppercorns
2 tbsp patis
1 medium onion,quartered
1 rib celery, cut into 2-inch lenghts
2 medium potatoes
bok choy or cabbage
scallions ,cut into 2 inch lengths
Place the chicken pieces in a large pot, add the water,ginger,peppercorns,salt,onions, and celery, andbring to a boil.
Lower the heat,cover, and simmer for 30 minutes.
Add the potatoes, and cook for 10-15 minutes.
Add the cabbage and green onions and cook for 10-15 minutes more, or until the cabbage is tender. Add patis and pepper to taste.
Serve with white rice
