LEMON GRASS PORK CHOPS
Broiling over charcoal is a common Thai cooking method whick gives meat a distinctive flavor,but heavy pan (cast iron) also work well.
MARINADE:
2 garlic cloves, minced
1/2 tsp white pepper
2 tbsp sugar
2 tbsp fish sauce
2 tbsp soy sauce
1 tbsp Oriental sesame oil
1 tbsp cognac or Whiskey or wine
2 tbsp chopped lemon grass
1 tbsp finely chopped green onion/scallion
2 tbsp coconut milk
4 pork chops, about 1 lb altogether
Mix together the marinade ingredients then thoroughly combine with the pork chops. Allow to sit for 1 hour.
Broil/grill/pan fry the meat for about 8 minutes on each side, or until done.
Serve with sweet and sour or other dip of your choice
