KARE KARE (Oxtail Stew)

3 pounds oxtail,cut into 2 inch lengths

2 cloves garlic,minced

1 medium onion,sliced

1 tbsp salt

3 tbsp peanut butter

green beans

carrots (optional)

eggplants(optional)

bokchoy or cabbage

Plac the oxtail pieces  in a large pot, cover with water and bring to a boil.

Lower the heat and simmer,covered, for 1 1/2 hours or until tender.Occasionally skim off the foam that rises to surface.

Remove the meat and allow it to cool.Heat the oil in a askillet and saute the garlic and onions for a few minutes. Stir in the peanut butter  and add the cooked meat,the  broth,more salt and pepper and simmer for 5 minutes more

Add vegetables and cook for 10 minutes more or until the vegetables re tender,stirring constantly.(You may add chicken bouillon for better taste if you dont like to serve it with shrimp paste)

Serve with white rice and shrimp paste.
