JAMBALAYA
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (14-1/2 ounces) beef or chicken broth
1 medium green pepper, chopped
1 red pepper,chopped
1 medium onion, chopped
3 celery ribs, chopped
3 garlic cloves, minced
2 teaspoons dried parsley flakes
3 pieces bacon
2 teaspoons dried basil
1 teaspoons dried oregano
1-1/4 teaspoons salt
1/2 teaspoon cayenne pepper
1/2 teaspoon hot pepper sauce
1 pound boneless skinless chicken breasts,or chicken of you choice
1 pound smoked sausage, cut into 1/4-inch slices
2 cups uncooked rice
Preheat the oven 350°F.
Saute the bacon until browned
Add the garlic ,onion,red and green pepper,and celery. Saute for about 3 minutes.
Stir in the chicken and sausage and cook for about 10 minutes.
Add rice,broth, and tomato and the rest of seasonings . Bring to a boil then transfer the pot to oven and cook until liquid is absorbed,about 30-35 minutes.
