1 tsp salt
1 tsp black pepper
4 tbsp flour
1/2 cup + 2 tbsp vegetable oil
2 tbsp ginger,julienned
3 cloves garlic ,crushed
5 greens onion, cut into 1 inch lenghts or 1 small onion,sliced thin
3 tbsp soy sauce
2 tbsp sugar
juice of 1 lemon
If using whole fish,clean well and slice into 4-6 pieces. Rub the pieces or the fillets with the salt and pepper and let stand for 1 hour. Lightly dredge the fish with flour.
In a skillet, heat the 1/2 cup of oil and fry the fish ubtil golden brown on both sides,15-20 minutes on each side. Drain on paper towels and keep warm in the oven.
Heat the 2 tbsp of oil in a saucepan and saute the ginger, garlic and onions for 2 minutes or until the oinons are soft.
Add the soy sauce,sugar and lemon juice and simmer for 2-3 minutes
