HUMBA
HUMBA (pork with black bean sauce)
2 pounds pork belly cut into 1 1/2 inch cubes
5 cloves garlic,smashed
1/2 cup vinegar
3 tbsp brown sugar
1/4 soy sauce
3 bay leaves
1 cinnamon stick
3 tbsp fermented black beans
1 tsp black peppercorns, crushed
1/2 cup water
Combine all the ingredients in a large pot,bring to a boil,
lower the heat and simmer until the pork is tender,about
1 hour.
Remove the bay leaves and cinnamon stickĀ and serve hot.
