ESCABECHE (the easy way )

1 Whole fish ,cleaned(tilapia, porgies,or red snapper)

salt and pepper

2 tbsp flour

Thumbsize ginger.julliened

1 garlic, minced

1 medium onion,thinly sliced

1/4 cup red and green bell pepper, thinly sliced

1 small carrot,julliened

1 cup pineapple juice

1/4 cup ketchup

1 tbsp cornstarch, dissolved in 1/4 cup water

1/4 tsp ground black pepper

oil for frying

1.Lightly salt and pepper the fish ,dust lightly with flour and fry in hot oil.

Heat 1 tbsp of oil an fry all the vegetables.\ until fragrant about 2 minutes..Remove to a plate

In the same pan, pour  the pineapple juice and ketchup.Simmer for about 4-5 minutes .Add the starch and continue  cooking until it  lightly thickens the sauce.. Add  more pineapple juice if needed. Pepper and salt if needed.

Put the fish in a plate.Pour the sauce over it. Nicely  arrange the vegetables over fish.Serve with white rice.ENJOY!
