EGGPLANT PARMESAN

Preheat the oven to 375F
INGREDIENTS:
2 large eggplants, peeled and thinly sliced
olive oil for frying
2 cups Italian seasoned bread crumbs
1 16 oz mozarella,grated or sliced
1/2 cup parmesan cheese
1 jar spaghetti sauce
Riccotta cheese
fresh basil leaves or parsley
3 eggs,beaten
1/2 tsp red pepper flakes(optional)

1..Dip eggplant slices in eggs,then breadcrumbs

2…Fry in olive oil until golden brown both sides.Place in paper towel lined plate

3..Spread about tablespoon of the sauce,riccotta cheese mozzarella onto one side of each slice of eggplant.

4.Roll up

5…..cover the bottom of the prepared bakin pan with the sauce..
Arrange the eggplant over the sauce
cover the eggplant with some of the sauce,mozarella,parmesan cheese and some basil or parsley..

6….Cover with foil and Bake for 45 minutes . Uncover and bake for another 15 minutes until it is golden and bubbling..
Cool before cutting
