DINUGUAN
1 pound pork butt
1/2 lb pork intestine
1 cup pork blood
3 garlic,chopped
4 bay leaves
1 tsp ground black pepper
salt to taste
1/2 cup vinegar
2 green chile
1 medium onion.chopped
This is what i do with intestine before adding to the rest of the ingredients
cut crosswise,clean,wash,cooked for 20 minutes,wash again and drain,cut into small pieces and set aside.
In a large pot, saute garlic and onion. Add pork ,intestine, bay leaves,salt,pepper,and water.Bring the mixture to a boil,then lower the heat and simmer until the pork is tender and most of the water is absorbed,about 30-40 minutes.
mashed the blood with vinegar,add in to the pot and cook for another 10 minutes or until the stew thickens. Taste and add salt or vinegar if needed.
