CHINESE SNAILS

2lbs snails rinsed well

2 garlic cloves,minced

scallions

1 tbsp minced ginger

1/4 cup white wine

1 black bean sauce

2 tbsp oyster sauce

1 tbsp cooking oil

3 cups water and 1 tbsp salt

Boil water in a work and add the snails Boil snails over medium heat for 10-15  minutes. Transfer to a bowl

Heat 2 tablespoons oil in wok over high heat until almost smoking, then quickly add garlic and giger and stir-fry about 30 seconds. Add snails and stir-fry 30 seconds more. Add wine, oyster sauce , black bean sauce ,and scallions and stir-fry 45 seconds more. Transfer to a bowl and serve.
