CHICKEN ADOBO

1/3 cup distilled white vinegar

1 can coconut milk

1/4 cup soy sauce

10 garlic cloves,peeled and chopped

3-4 chillies

4 bay leaves

1 1/2 fresh ground pepper

12 pieces chicken wings,you may add some pork if  you want

Combine all the marinade ingredients in a large saucepan. Add the chicken and turn to coat.Refrigerate for at least 2 hours.

combine all the marinade ingredients in a large saucepan. Add the chicken and turn to coat. Immediately reduce heat to a simmer and cook, stirring occasionally, until the chicken is cooked through and tender, about 30 minutes.

Heat broiler. Transfer chicken pieces to a  roasting pan .Raise heat  under the pot  to a medium -high heat, and reduce the sauce until it achieves almost the consistency of cream,about 7-10 minutes.

Place the chicken together with the sauce under broiler for about 5-7 minutes,until they begins caramelize. Turn  and baste with the sauce and repeat. Return the chicken and cook for a few minutes more,then place on a platter and drizzle heavily with sauce.

Serve with white rice
