BLUEBERRY SCONE

BLUEBERRY SCONE

4 cups all purpose flour

8 tbsp sugar

4-1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 plus 2 tbsp cold butter

2 eggs

1 eggyolk

3/4 cup milk

1-1/2 cups fresh or frozen blueberries

In a big bowl,combine the flour sugar baking powder and salt cut in butter until mixture resembles coarse crumbs.

in another bowl whisk eggs and milk

add to dry ingredients just until moistened

gently knead in the blueberry

place on a greased baking sheet..beat eggyolk and brush over dough

bake at 375 for 15-20 minutes or until tops are golden brown
