then add the rice and stir until thickened about 30 minutes

Line a baking pan with coconut leaves.spread evenly and broil for about 6 minutes .

you may add latik or any of your fav topping..sometimes I just simply roll and wrap them in banana leaves and steam

if you want  this topping..just combine 1 can of coconut cream 3 tbsp of coconut jam.cook over medium heat until thick .about 30 minutes.spread on top and bake at 400 for 25 minutes

  1. Tried it and it was just perfect! You only need to broil if you spread the topping over the biko. Instead of adding coco jam to the coco cream, use brown sugar until you get the right sweetness. I used a total of 15 tablespoons to one can of coco cream. Cool it down before adding to the biko so it stays on top of the biko.

  2. I tried making this yesterday for the first time and it turned out good. I omitted the anise though and substituted peeled and sliced ginger instead (my hubby likes the ginger taste in Biko). Other than that, I followed everything else but I think next time I will skip the broiling part because that dried up and toasted the top of the Biko. The top tasted hard and seemed to dried up that part of the Biko.

    Thank you for sharing.
