1 lb ground beef
6 eggs
1 clove garlic,minced
1 medium onion
red,yellow,orange bell pepper,chopped
1 medium tomatoe,chopped
scallion,chopped
mushrooms,sliced,sauteed separately
1/2 tsp cumin
1 packet sazon goya (optional)
salt and pepper to taste
serve with ketchup
Saute garlic and onion and add the beef. Cook for about 10-15 minutes.
Saute vegetables in another pan. Season with salt and pepper
Beat the eggs ,season with salt and pepper or add sazon goya
Add the cooked vegetables to meat and cook for another 3-5 minutes
In a small bowl, add about 1/2 cup of meat mixture and 1/4 cup of eggs. Stir to distribute all the ingredients.
Add about 1 tbsp of cooking oil to a nonstick pan. Pour the meat mixture to the pan and cook for about 3 minutes . Flip it over and cook for another 2 minutes or until the eggs are fully cook.
Serve with ketchup..
