BANANA MUFFIN

1 1/2 flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

3 large ripe bananas, mashed

1 cup caster sugar

1 large egg, beaten

1 1/2- cups milk

1/2 cup oil

1/2 cup walnuts or pecans,chopped

1. Preheat the oven to 350F.

2. Sift the flour, baking powder, baking soda and salt into a big bowl. In a separate bowl, mix together the bananas, sugar, egg, milk and oil.

3. Now add the wet ingredients to the dry and stir until they come together to form a batter. No flour should be visible, but the mixture should still be lumpy so be careful not to overmix. Add the nuts, if using, and pumpkin seeds, and stir them in.

4. Spoon the batter ito paper cases set in a muffin tray. If you want sprinkle nuts or sugar over the tops of the muffin, then bake for 20-25 minutes until the tops are lightly browned and springy to the touch. Cool on a wire rack
