BACALAO GUISADO

-Note-you can shred the fish before adding to the sauce . either way, it works great.

3 tbsp olive oil\

1 green pepper,chopped,

1 red pepper,chopped,

1 large onion,chopped

3 garlic cloves,chopped

4 tomatoes,c hopped

1/4 cup cilantro

In a large pot,add the codfish with a gallon of water bring it to a boil and cook for 15 minutes to remove the salt.DrainĀ  and set aside

or

soak for up to 3 hours in cold water

In a large pan heat olive oil . Add the garlic,onion,green and red pepper,bay leaves.cilantro.
Cook until the vegerables are soft,about 10 minutes.


Add the codfish and continue cooking for another 5-7 minutes

Serve with rice or green saba (plantain)
