ARROZ CON POLLO

INGREDIENTS:

Chicken:

1/4 cup fresh lemon juice

1 tsp salt

1 tsp dried oregano

1/2 tsp cumin

1 tsp turmeric

8 chicken thighs or drumsticks

4 garlic cloves,chopped

Rice:

2cups uncooked white rice

2tsp olive oil

2 1/2 cups chicken broth

3tbs commercial sofrito(such as goya)

1/2 tsp cumin

1/2 tsp turmeric

1/2 tsp saffron threads

1/2 cups frozen green peas,thawed

1/2 thinly sliced red pepper

or

1 (7-ounce) jar sliced pimiento,drained

Combine first 7 ingredients in a large bowl or pan and marinate in refrigerator for 1 hour

Remove chicken from bag ,reserving marinade.

Heat olive oil over medium heat .Add chicken and cook 5 minutes one ach side or until browned.

Add reserved marinade ,rice, chicken,chicken broth,sofrito,cumin,turmeric,saffron redpepper to pan.Bring to a boil.Cover,reduce heat and simmer 25 minutes.Stir in peas and pimiento if using instead of red pepper;let stand,covered,10 minutes.

This is Cuban specialty very easy to make but amazingly good..
