Samotsaring Luto (youtube channel)


For many Brazilians this humble dishbeans cooked with onions and garlic is everyday eating. High in protein and iron,this is an excellent economical dish which can be served to supplement a small portion of meat.


2 cups dried black beans

4 cups water

3 tbs vegetable oil

1 onion,chopped

3 cloves garlic,finely chopped

1 bay leaf

1 tsp salt

1. Put the beans and water in a pressure cooker, seal the lid and cook on a high heat until steam starts to scape. Lower the heat and cook for 40 minutes, until the beans are soft.

2. Heat the oil in a deep frying pan and fry the onion and garlic for 7-8 minutes, or until they start to brown.

3. Add a ladleful of beans and stock to the hot frying pan, and deglaze the pan by stirring together with the onion and garlic for a minute, scraping up any residue sticking to the base. Pour the mixture back into the rest of the beans in the pressure cooker.

4. Add the bay leaf to the beans, then simmer for a further 20 minutes, uncovered , until the onion is soft and the stock has reduced to a thick sauce.

5. Remove the bay leaf and stir in the salt. If you prefer a thin sauce, add in a little boiling water.

6. Serve the beans straight away while still piping hot,as an accompaniment to a rice or meat dish.
