CRUSTED COD

Cod is easy to find and has a clean taste, without any fishy or oily qualities, so it is a good fish to use if your family has finicky eaters. The panko crusted mustard flavor keeps it from being bland, with overwhelming the fish.

INGREDIENTS

4 pieces codfish filets

4 tsp whole grain Dijon mustard

1/4 medium sized red pepper

salt to taste

1 tbsp oive oil

lemon for garnish

SEASONING

6 tbsp panko

2  tbsp parsley

3 tbsp olive oil

pinch of salt

fresh black pepper to taste

1. In a small bowl, mix al seasoning ingredients and set aside.

2. Place the codfish filets on a plate and sprinkle with alt. In the baking pan for your toater oven, place a sheet of aluminum foil and grease with olive oil.

3. Evenly spread the mustard on both sides of the cod filets. Place filets side by side on the aluminum foil. Place the seasoning on top of the fish and put in oven toaster for 6-7 minutes until cooked.

4. Cut the pepper into 1/4 inch pieces. In a microwave safe bowl, add the pepper, a pinch of salt, and 1 tsp of the olive oil. Microwave on high without covering the bowl for 2 minutes.

5. Serve the cod filets on a plate with lemon  wedges and the red pepper on the side.
