CHICKEN,CARROT AND LEEK PARCELS

 

These intriguing parcels may sound a bit fiddly for everyday, but they take very little time and you can freeze them- ready to cook gently from frozen.

INGREDIENTS

Serves 4

4 chicken fillets or boneless breasts

2 small leeks  , sliced

2 carrots,grated

4  stoned black olives,chopped

1 garlic clove, crushed

1-2 tbsp olive  oil

8 anchovy fillets’salt and black pepper

black olives and herb sprigs, to garnish

1. Preheat the oven to 400°F. Season the chicken well with salt and pepper.

2. Divide the leeks equally among four sheets of greased grease proof paper, about 9in square. Place a piece of chicken on top of each one.

3. Mix the carrots,olives, garlic andoil together. Season lightly and place on top of the chicken portions. Top each with two of the anchovy fillets, then carefully wrap up each parcel, making sure the paper folds are underneath and the carrot mixture on top.

4. Bake for 20 minutes and serve hot, in the paper, garnished with black olives and herb sprigs.
