CHICKEN STEW

2 dried pepper of your choice

12 chicken drumsticks

2 tbsp oil

1/2 cup of 14 1/2-ounce can diced tomatoes,undrained

1 large onion,cut up

3 cloves ,minced

1 tsp dried oregano

2 tsp salt

1/2 tsp black pepper

1/2 tsp cinnamon

1/8 tsp ground clove

2 cups chicken broth or 2 cups water and 1 chicken bouillon

1 plantain sliced

1 potatoe cliced

cannellini beans

Soak dried pepper in a cup of boiling water for 30 minutes. Drain well,cut into small pieces set aside

Remove skin of chicken pat dry.Cook chicken in hot oil for 10 minutes or until well browned all sides

IN A BLENDER,combine pepper,undrained tomatoes,onion,garlic,oregano,salt,black pepper,cinnamon,cloves.CoverĀ  and blend until smooth

STIR tomatoe mixture and chicken broth and add to chicken.bring to boiling.

Stir in plantain and potato.Reduce heat and simmer,covered.over medium heat for 20-30 minutes or until potato is tender.

STIR in beansĀ  cover and heat through
