NUT AND SEED CAKES

LAVENDER CAKE

3/4 cup unsalted butter,softened,plus extra for greasing

1 cup caster sugar

3 eggs

1 1/2 cups self-rising flour

1 tbsp fresh lavender florets or dried culinary lavender,roughly chopped

1/2 tbsp vanilla extract

1/2 tbsp milk

For the topping

1/2 cup confectioners sugar,sifted

fresh lavender florets,to decorate

1. Preheat the oven to 350°F. Grease and flour a 8in round deep cake pan.

2. In a large bowl,cream the butter and sugar together until light and fluffy. Add the eggs one at a time,beating throughly between each addition, until skewer comes out clean when inserted.

3. Sift the flour,then fold in with the lavender,vanilla and milk.

4. Spoon the mixture into the pan and smooth to top level. Bake for 1 hour,until golden.

5. Leave to cool for 5 minutes before turning out on to a wire rack to go cold.

6.To make the topping,mix the confectioners sugar with a few drops of water until smooth. Pour over the cake. Decorate with lavender florets.

CARAWAY SEED CAKE

SERVES 8

3/4 cup butter,softened, plus extra for greasing

1 cup caster sugar

3 eggs

2 cups all purpose flour

1 tsp baking powder

2 tsp caraway seeds

1/3 cup finely chopped mixed candied peel

milk

1. Preheat the oven to 350°F. Grease and line 8in round deep cake pan with baking parchment.

2.In a bowl,beat the butter and sugar until fluffy, then beat in the eggs one at a time.Sift the flour with the baking powder into the bowl. Add the caraway seeds.Beat well.

3. Using a metal spoon. fold in the remaining ingredients.

4. Spoon the batter into the prepared pan and smooth the top level. Bake for 1- 1 1/4 hours, or until a skewer comes out clean when inserted.

5. Cool for 15 minutes in the pan,then turn out on to a wire rack to go cold. Remove the lining paper.

CARDAMOM CAKE

1 cup butter,softened,plus extra for greasing

3 1/4 cups all purpose flour

3 tbsp baking powder

10 cardamom pods,seeds removed and finely crushed

1 1/4 cups caster sugar

3 large eggs,lightly beaten

2/3 cup milk

3 tbsp raisins

3 tbsp candied peel

1 tbsp sliced almonds

1. Preheat the oven to 375°F. Grease and line a 2 1/4 lb loaf pan with baking parchment.

2. Sift the flour, baking powder and crushed cardamom seeds together.

3. In a large bowl,cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time,adding a tsp of the flour with each egg. Fold in the remaining flour.

4. Add the milk, a little at a time, folding in well after each addition.

5. Add the raisins, candied peel and almonds, and fold in well. Turn the mixture into the pan and smooth the top level.

6. Bake for 50 minutes, or until risen and firm to the touch. Turn out and cool on a wire rack. Remove the lining paper.

COFFEE AND MINT CREAM CAKE

SERVES 8

3/4 cup unsalted butter,softened,plus extra for greasing

1 tbsp ground coffee infused in 1 1/2 tbsp hot water for 4 minutes then strained and cooled

1 cup caster sugar

2 cups self rising flour, sifted

1/2 cup ground almonds

3 eggs

small sprigs of fresh mint,to decorate

For the filling

1/4 cup unsalted butter

1 cup confectioners sugar,sifted,plus extra for dusting

2 drops of peppermint extract plus 1 tbsp milk

1. Preheat the oven to 350°F. Grease and line two 7in round shallow cake pans.

2. Put the butter,sugar,flour,almonds,eggs and infused ground coffee in a large bowl. beat well for 1minute unti blended.

3. Divide the mixture evenly between the pans and smootht the top level. Bake for 25 minutes, or until well risen and firm to the touch. Leave in the pans for 5 minutes, then turn out to a wire rack to go cold.

4. To make the filling, cream the butter,confectioners sugar,peppermint extract and milk together in a bowl until light and fluffy.

5. Remove the lining paper from the sponges and sandwich together with the filling. Generously dust the top with confectioners sugar. Top witht he fresh mint leaves just before serving.
