3/4 cup unsalted butter,softened,plus extra for greasing
1 cup caster sugar
3 eggs
1 1/2 cups self-rising flour
1 tbsp fresh lavender florets or dried culinary lavender,roughly chopped
1/2 tbsp vanilla extract
1/2 tbsp milk
For the topping
1/2 cup confectioners sugar,sifted
fresh lavender florets,to decorate
1. Preheat the oven to 350°F. Grease and flour a 8in round deep cake pan.
2. In a large bowl,cream the butter and sugar together until light and fluffy. Add the eggs one at a time,beating throughly between each addition, until skewer comes out clean when inserted.
3. Sift the flour,then fold in with the lavender,vanilla and milk.
4. Spoon the mixture into the pan and smooth to top level. Bake for 1 hour,until golden.
5. Leave to cool for 5 minutes before turning out on to a wire rack to go cold.
6.To make the topping,mix the confectioners sugar with a few drops of water until smooth. Pour over the cake. Decorate with lavender florets.
