1 cup plain Greek Yogurt
- 3 tbsp minced fresh mint
- 4 garlic cloves, minced
- 1 1/2 tsp lemon juice
- Salt and pepper
- 2 slices hearty white sandwich bread, crusts removed, torn into large pieces
- 1 1/2 pounds 85 percent lean ground beef
- 1 onion, grated
- 1/4 cup chopped fresh parsley
- 2 tsp ground cumin
- Combine yogurt, mint, half of garlic, and lemon juice in small bowl and season with salt and pepper to taste. Using fork, mash bread and 3 tbsp yogurt mixture in large bowl until smooth paste forms. Add beef, onion,parsley,cumin, 2 tsp salt,1/4 tsp pepper, and remaining garlic and mix until thoroughly combined.
- Divide beef mixture into 4 equal portions. Mold mixture around four 12-inch metal skewers into 7-inch long, 1 1/2 inch wide, 1-inch high kebabs, Transfer kebabs to baking sheet.
- Grill kebabs over hot fire until well browned and cooked to desired doneness, 4 to 5 minutes per side, using thin metal spatula to turn kebabs as needed. Serve kebabs with remaining yogurt mixture.
