1 1/2 tbsp vegetable oil
1 tbsp Thai red curry paste
3 tbsps coarsely chopped garlic
3 tbsps finely sliced shallots
1 lb minced pork
2 tbsp fish sauce
3 tbsp coconut milk
2 tsp sugar
a very large handfull of fresh basil leaves,chopped

1. Heat a wok or large frying pan over medium heat and add the oil. When it is very hot and slightly smoking,add the curry paste and stir-fry gently for 1 minute,until it begins to melt.
2. Add the garlic and shallots and sitr fry for a minute longer. Then add the pork and stir-fry for 3 minutes.
3. Now add the fish sauce, coconut milk and sugar and stir fry for 3 minutes longer. Finally add the chopped basil and stir-fry for another minute. Serve at once.
