Stir Fried Broad Beans with Red Curry

2 lbs fresh broad beans
1 tbsp vegetable oil
3 tbsp finely sliced shallots
3 tbsp finely sliced garlic
2 small,fresh red chillies,seeded and sliced
freshly ground black pepper to taste
2 tsp sugar
2 tsp red curry paste
1 tbsp fish sauce
2 tbsp water

1.If you are using fresh broad beans,shell them and then blanch in a large pan of boiling salted water for 2 minutes. Drain throughly, refresh in cold water and drain again. When cool,slip off the skins. If you are using frozen beans,simply thaw them

2. Heat a wok or large frying pan over high heat and add the oil. When it is very hot and slightly smoking,add the garlic,shallots,chillies and black pepper and stir fry for 1 minute.

3. Add the broad beans,sugar,red curry paste,fish sauce and water and continue to stir fry over high heat for 2 minutes. Serve at once.
