Spicy Noodle Salad


These delectable dishes are often served at room temperature.

8 oz flat rice noodles,rice vermicelli or rice sticks
1 tbsp vegetable oil
3 tbsp chopped dried shimp
3 tbsp sliced garlic
3 tbsp sliced shallots

8 oz minced pork

3 tbsp fish sauce

1 tbsp sugar

3 tbsp lime juice

3-4 small,fresh red or green thai chillies,seeded and chopped

salt and freshly ground black pepper to taste

To garnish

2 oz roasted peanuts,crushed

a few fresh coriander sprigs

1. Soak the rice noodles in a bowl of warm water for 25 minutes,then drain them in a colander or sieve.

2.Heat a wok or large frying pan over a high heat and add the oil. When it is very hot and slightly smoking,add the dried shrimp and garlic and stir fry for 1 minute,until golden brown. Then add the shallots and pork and stir fry for 3 minutes.

3.Now add the fish sauce,sugar,lime juice,chillies,salt,pepper and finally the drained noodles. Stir fry for 3-4 minutes. Turn on to a large platter and sprinkle the garnishis on top. Serve at once,or let it cool and serve at room temperature.
