Green Bean Salad


1 lb winged beans or french beans
2 small,fresh red or green thai chillies,seeded and chopped
2 tsp sugar
2 tbsp lime juice
2 tbsp fish sauce or light soy sauce
7 fl oz tinned coconut milk
5 tbsp finely sliced shallots
3 tbsp crushed roasted peanuts
2 tbsp toasted desiccated coconut

1. Blanch the beans in a large pan of boiling salted water for 3 minutes,then drain and plunge them immediately into cold water. Drain thoroughly and set aside.

2. Put the chillies,sugar,lime juice,fish sauce or soy sauce and coconut milk in a bowl and mix well

3.Toss the blanched beans and shallots with this mixture. Garnish with the peanuts and desiccated coconutĀ  and serve.
