5 dried chillies
2 tbsp vegetable oil
4 oz peeled garlic,finely chopped
4 oz shallots,finely chopped
1 tbsp shrimp paste
2 tbsp fish sauce or light soy sauce
2 tsp sugar
4 tbsp water
15 fl oz vegetable oil,for deep frying
4 small trout,cleaned
plain flour,for dusting
frsh coriander sprigs,to garnish
1. Soak the dried chillies in warm water for about 5 minutes,until softened. Drain well and chop them finely.
2. Heat a wok or large frying pan over a highheat and add the oil. When it is very hot and slightly smoking, stir in the chillies,garlic,shallots and shrimp paste. Stir-fry for 2 minutes, then add the fish sauce or soy sauce, sugar and water. Remove from the heat and pour the mixture into a bowl.
3. Wipe the wok clean, add the oil for deep frying and heat. Blot the trout dry inside and out with kitchen paper. Dust the outside throughly with flour,shaking off any excess.
4. When the oil is very hot and slightly smoking,turn the heat down to medium and fry the trout for about 4 minutes on each side, until brown and crisp. Remove the trout and drain on kitchen paper. Arrange on a platter,garnish with coriander sprigs and serve with the chilli sauce.
