CLASSIC BANANA MUFFIN

INGREDIENTS:

2 cups cake flour

1/2 tsp baking soda

1/2 tsp salt

1 cup brown sugar

4 tbsp butter softened

2 large eggs

2 large ripe bananas,mashed

8 oz sour cream

1 tsp vanilla extract

1.Preheat oven to 350

2. Lightly spoon flour into dry measuring cups, level with a knife. Combine flour, baking soda, and salt stirring with a whisk.

3.Place sugar and butter ina large bowl,and beat with a mixer at medium speed until well blended (about 1 minute). Add eggs, 1 at a time,beating well after each addition. Add banana,sour cream, and vanilla, beat until blended. Add flour mixture,beat at low speed just until moist ,about 1 minute.

4.Spoon batter into 12 muffin cups coated with cooking spray or  line cups with paper liners.Sprinkle batter lightly with raw sugar.

Bake at 350 for  20-25 minutes or until wooden stick inserted comes out clean.

Cool completely
