FRIED CHICKEN-3

vegetable for frying

1/4 cup butter

1/4 cup red hot sauce cayenne sauce

dash ground pepper

dash garlic powder

1/2 cup all purpose flour

1/4 tsp paprika

1/4 tsp cayenne pepper

2 tsp salt

chicken legs and thighs or chicken wings

Use 1 tsp to salt the chicken

Heat oil in a deep fryer to 375 degrees F. You want just enough oil to cever the chicken entirely- an inch or so deep at least.

Combine the flour,paprika,cayenne pepper,and the remaining 1 tsp salt in a small bowl.

Put the chicken into a large bowl and sprinkle the flour mixture over them,coating each chicken evenly.

Put the chicken in therefrigerator for 60-90 minutes. (This will help the breading to stick to the wings when fried

Put the chicken into the hot oil and fry them for 10-15 minutes or untilsome parts of the chicken begin to turn dark brown.

Drain and serve with your favorite sauce..hot sauce or blue cheese dressing works great
