HUNGARIAN BEEF GOULASH

INREDIENTS:

6 medium onions ,chopped

2 garlic cloves,chopped

2 oz smoked bacon

1 tbsp vegetable oil

1 1/2beef chuck steak

2 tbsp paprika

1 1/2 tsp ccaraway seeds

2 cups water, more if needed

2 tomatoes,seeded,chopped

2 green or red bell pepper

1/2 cup sour cream(optional)

Dice the bacon. Heat the oil in the casserole,add the bacon,and cook,stirring,until it is lightly browned and the bacon fat is rendered (melted down)3-5 minutes.

Stir in the onions. Cook over low heat,stirring occasionally, until the onions are soft and translucent,20-25 minutes.Do not let the onions burn.

stir the paprika into the onions and bacon and cook 2 minutes longer.

add the beef chuck steak,garlic, pepper,caraway seeds,and water to the casserole and stir to combine.

Bring to a boil stirring well,then cover with the lid and continue until theĀ  beef is

tender 2-2 1/2 hours. Stir occasionally adding more water if the onions start to stick.

serve with white rice
