Green Lima Beans in a Sauce

Ingredients:
1 lb fresh lima beans or broad beans
2 tbsp olive oil
1 onion,finely cpped
2 garlic cloves,crushed
14 oz can plum tomatoes,drained and chopped
3 tbsp drained pickled jalapeno chlli slices,chopped
salt
fresh coriander and lemon slices,to garnish

1. Bring a sasucepan of slightly salted water to a boil. Add the lima beans or broad beans and cook for 15 minutes,or until just tender.

2. Meanwhile,heat the olive oil in a frying  pan, add the onion and garlic and saute until the onion is translucent. Tip in the tomatoes and continue to cook,stirring, until the mixture thickens.

3. Add the chilli slices and cook for 1-2 minutes. Season with salt to taste.

4. Drain the beans and return them to the pan. Pour over the tomato mixture and stir over the heat for a few minutes. If the sauce thickens too quickly add a little water . Spoon into a serving dish,garnish with the coriander and lemon slices to serve.
