Blackened herring with Chilli Sauce

SERVES 2
4 small herring,gutted
lemon wedges, to garnish

FOR THE SAUCE
1 tbsp chili paste
2 tbsp korean chili powder
1 tbsp dark soy sauce
1 tbsp lemon juice
2 tsp sake
2 tbsp maple syrup
2 tbsp finely chopped spring onion
1 garlic clove,crushed

1. Wash the fish, dry with kitchen paper and score diagonally on both sides.

2. To prepare the sauce, mix the chili paste and powder, soy sauce,lemon juice,sake,maple syrup, spring onion and garlic in a  large shallow dish.

3. Add the herring and leave to marinate for 5 minutes, then turn the fish and leave for a further 5 minutes.

4. Heat a griddle pan or frying pan over a medium heat. Brush a little of the sauce over both sides of the fish before placing in the pan.

5. Cook for 10-15 minutes, turning once, until the fish has blackened slightly on each side but do not let them burn. Serve with lemon wedges.
